Crispy cauliflower pizza crust
Serves 4 | Prep time: 5 min | Total time: 20 min
450 g cauliflower rice
100 g mozzarella cheese
50 g parmesan cheese
1 medium egg
Optional: salt and pepper
Microwave the cauliflower rice for 3 minutes on high. You could also stir fry it, or roast it with a drizzle of olive oil for 10-12 min at 400ºF (200ºC).
Combine cauliflower with all other ingredients and press on a non-stick baking sheet into a 1/3″ (1 cm) base.
Place in the oven and bake for 15 min at 450ºF (230ºC), or until golden and crispy on the edges.
Optional: add your favourite toppings and grill for a couple of minutes.
