Roast Chicken Provençal
Serves 4 | Prep time: 10 min | Total time: 70 min
1 whole chicken, small (∿1 kg)
2 tbsp olive oil
2 garlic cloves, minced
1 tsp herbes de Provence (or any mixture of dried herbs)
Preheat oven to 650° F (350 ºC). In a bowl, mix together olive oil, garlic cloves, herbes de Provence and black pepper.
Rub chicken with herb mixture and place in the oven for 1 hour.
Let it stand for about 10 minutes.
